THE PUGLIA CHEF ACADEMY AND GIO'S KITCHEN RECREATIONAL COURSES RUN EVERY DAY EXCEPT SUNDAYS THROUGHOUT THE YEAR AND ARE ENDURINGLY POPULAR, INSPIRED BY THE BURGEONING FOOD TREND OF MEDITERRANEAN HEALTHY VEGETARIAN FOOD AND ARE ALREADY ATTRACTING PROFESSIONALS AND SKILLED ENTHUSIASTS IN EQUAL MEASURES.
OPTIONAL EXTENSION COURSES INCLUDE PAINTING, POTTERY AND ITALIAN LANGUAGE.
Learn to make our featured dishes and dine together in a relaxed garden setting. You will learn to make traditional orecchiette pasta, a fresh tomato sauce with herbs,
braciole ( rolled meat) eggplant parmisan and tirmaisu. Taste delicious locally sourced cold cuts and cheeses Vegetarian or fish options are available on request.
We will cook for 3 hours and then enjoy a memorable lunch/dinner all together.

Puglian seafood cooking course
Learn how to clean and prepare locally sourced shrimp, squid, baby octopus, cod and "moscardini" which are small fish. You will make the batter and drop the seafood into hot oil and learn how to fry, serve and garnish the dish you have prepared. Enjoy a selection of local cheeses and cold cuts, and organic wines.

Held over five daily classes and one day of local food exploration, “Cuisine Essentials” teaches fundamental cuisine skills to provide you with a solid foundation of cooking expertise. Techniques are first demonstrated by our Master Chefs before you apply them to a number of carefully selected recipes.
This course has been designed to improve your confidence in the home kitchen and provide an essential repertoire of skills that can be applied daily to a variety of dishes. No previous culinary experience is required to apply.

Day 1: Key knife skills, manage essential ingredients, simple pan sauces
Day 2: Making the perfect home made pasta
Day 3: Red meat preparation and cooking
Day 4: Fish and shellfish preparation and cooking

Learn to make the pizza and foccacia dough and the panzarotti dough from scratch. Choose your toppings, cook your pizza and foccacia in our outdoor, wood fired pizza oven, deep fry your panzarotti. Enjoy your dishes with a selection of crudeties and salad and a glass or more, of beer or wine.

All equipment and ingredients are provided, ingredients are pre-prepared and there is no washing up. Just a fun, inspiring day. Gio Fasano is the cofounder and managing director of the "Puglia Chef Academy" and author of giositaly.com a blog about healthy food, organic wines, travel and his creative life.
When he’s not eating or cooking, Gio runs his own companies, Green Italy Tours, and Italian Countryside, featured on House Hunters International and USA Today.
Before leaping into the world of food, he worked for several architectural firms and construction companies in Europe and the Middle East. He also worked on weekends at Oddbins in London where he learned about wines from the “new world”.
Gio’s education is varied. He started with engineering at the George Washington University in DC and moved to architecture with a degree from the Catholic University of America. After college he spent a year working on organic farms in Tuscany, where he harvested wine grapes, and planted an olive orchard. In the past ten years he has shared his honest adventures in the kitchen with many guests from all over the world; he has founded the “Puglia Chef Academy” and the “Olive Wood Cafe” in Ostuni as well as a restaurant within his family resort in Taranto (Mon Reve).
When not working on cooking and eating food, he blows off steam (and calories) sailing off the coast of Puglia, where he lives. Gio is an avid supporter of the arts, incurable doodler, owner of too many cookbooks and classic cars and human to Jack and Aaaron , his rescue dogs who serve as the PCA Chief Executive Officers.

This was my first cooking class in Italy so I wasn’t sure what to expect. I was traveling with my daughter and we are both cooks. Gio was so warm and accommodating. I even had to change the date of my original booking and he helped me work it out, even encouraging me to come on a day that he thought would be more interesting for me and my daughter. I can’t say enough about what a wonderful an afternoon it was. We learned how to cook many dishes, but more important was the company and the wonderful meal we shared outdoors at this beautiful villa. the whole team was warm, inviting, generous and yet very skilled and inclusive. I am looking forward to more classes with Gio when I get back to Italy which will be soon I hope.

Fabulous cooking experience. I cannot rate this experience high enough. It was definitely one of the loveliest cooking classes I've done. Very authentic and run by kind and generous people. I was picked up from my hotel by friends of Angela's and they were absolutely delightful. Angela, Gio and Maria greeted us with a friendly relaxed welcome. Everything rolled along in such a calm organic way. I felt like I had gone to a friend's house for lunch. The recipes were surprisingly simple but ohhhh do yummy. Be warned to bring a cooler bag because you won't be leaving empty handed. Sooo much food...

We had an amazing time with Gio and Luiga at his home in Ostuni. We made orecchiette, braciole, parmagiana di melanzane, stuffed courgette flowers and tiramisu! The food was amazing, wine free flowing and they welcomed us into the home like we were family. Would definitely recommend this cooking course as a way to spend half a day whilst in Puglia.

Highlight of my Holiday!! Had such an incredible time learning to cook some italian dishes with my mum here, including making pasta by hand! Gio, Francesca and Angela were the perfect hosts and teachers. It was a very fun (and very informative) night of delicious food, amazing wine, and incredible company - couldn’t have asked for a better evening! Highly recommended!!
